The Brief
Lead a destination kitchen that celebrates the sea, the farm, and refined simplicity. You’ll set the culinary vision across multiple outlets and experiences while building a high-performing, teaching-forward brigade that thrives in a remote island environment.

What You’ll Do

  • Own the culinary program across the restaurants, in-villa dining, beach picnics, events, and breakfast baskets—driving consistency, originality, and guest delight.

  • Design and engineer menus: dish costing, yield management, portion control, plating standards; keep food cost on target without compromising quality.

  • Build and mentor the team: recruit, coach, and succession-plan Sous, CDP, pastry, and stewarding; run daily briefs, tastings, and performance standards.

  • Forge island supply chains: direct relationships with fishermen and growers; seasonal buying, nose-to-tail/fin-to-gill utilization, and waste minimization.

  • Set gold-standard HACCP and sanitation practices; lead audits, labeling, cold-chain integrity, and allergen protocols.

  • Partner with F&B & Rooms on experiences: chef’s tables, sandbar pop-ups, wellness menus, bespoke celebrations, VIP amenities.

  • Own R&D: run trials, refine hero dishes, document SOPs, and train for replication at scale (including high-volume banquets).

  • Collaborate cross-functionally with Purchasing, Finance, and Engineering on inventory, maintenance, and capex for BOH efficiency.

What You Bring

  • 8+ years senior leadership in luxury resorts or remote/expedition dining; background spanning tasting menus and high-volume events a plus.

  • A portfolio of dishes that shows restraint, technique, and sense of place—especially with local seafood and tropical produce.

  • Mastery of menu engineering, COGS, HACCP, and team development; calm under pressure with impeccable pass management.

  • Cultural sensitivity and the heart of a teacher; you elevate local talent and cultivate an international standard.

  • Strong admin chops: inventory, scheduling, production plans, and clear kitchen documentation.

What Success Looks Like (12 Months)

  • Food cost within target, waste down ≥15%, and guest satisfaction scores at top-quartile for category.

  • A bench of promotable Sous/CDPs and a kitchen known for precision and warmth.

  • Signature dishes that become destination draws and travel well across outlets and events.
